Quinoa Salad
Ingredients:
-1 Roma tomato
-1/4 cup of white onion
-1/4 cup of cooked black beans
-1/4 cup of cooked corn kernels
-1/4 cup of green and red bell peppers (mixed)
-1 cup of cooked quinoa
-2 Tbsp. Olive oil
-Salt/ Pepper

Directions:
1. Cook 1 cup of quinoa with 2 cups of water. Cook on medium heat until water is absorbed in the quinoa OR in a rice cooker.
         **Trader Joes offers precooked quinoa in the freezer section. Heat up according to the directions on the box.
2. Cut  tomatoes into smaller pieces.
2. Mix all ingredients together in bowl and Enjoy!

Spinach-Berry Salad

Ingredients:
(use as much of each as you like)
-Spinach (washed)
-Strawberries
-Raspberries
-Blueberries
-Feta cheese
-Tomatoes
-Cucumber
-Raspberry Vinaigrette

 

 

*** Optional ingredients- sunflowers, walnuts, peaches, apples, Olive oil and lemon juice as dressing, Chicken or Shrimp

-Hummus works great as a dip with any vegetable.
-Suggested vegetables:
       *Carrots
       *Celery
       *Cucumbers
       *Broccoli

Ants On A Log

"Ant" your snack Two ways:
First way:
1. Fill the center of the celery sticks with your choice of peanut butter
2. Stack raisins on top of the peanut butter

Second way:
1. Spread the peanut butter on the bread.
2. Cut the celery into slices and place on top of the peanut butty.
3. Sprinkle raisins on top of the celery and peanut butter.
4. Close your sandwich and Enjoy!
